Caviar Kaspia at 17 Place de la Madeleine has been a Paris institution since 1953, originally opened by Russian emigre Arcady Fixon in 1927. Its signature dish is a twice-baked Samba potato from Brittany, topped with caviar, served with fresh cream and chives, and accompanied by a chilled shot of vodka. It is documented as Beyonce's favourite restaurant in Paris - Pinterest, Highsnobiety and Upper East Site have all cited her as a regular, and on 6 June 2018 she was photographed walking in for dinner. Jay-Z and Rihanna have also been spotted at the restaurant. In June 2025, two days after Jay-Z made his surprise Crazy In Love appearance during Beyonce's Cowboy Carter night at Stade de France (22 June 2025), the couple were out together in Paris again - confirming the Madeleine restaurant as the on-record anchor of their Paris stops. The success of Caviar Kaspia's Paris original is so durable that it now has an NYC outpost inside The Mark Hotel.
